Cooking Instructions

Preheat the oven to 200°C/180°C fan. Line a baking sheet with parchment.

Unroll the
pastry (1 pack)
onto the baking sheet. Score a border about 1.5cm from the edge of the pastry, and using a fork, prick the pastry inside the border.

Whip together the
soft cheese (100 g)
, 100g of the
goat’s cheese (125 g)
and ¾ of the
thyme (2 sprigs)
. Brush the pastry with the beaten
egg (1)
, then spread the cheese mix over the pastry, avoiding the borders. Chill in the fridge for 10 minutes.

Coat the
pear slices (3)
in the
honey (20 g)
, then lay them on top of the cheese mix along with the remaining thyme leaves and goat's cheese . Add a good grinding of pepper. Bake for 20 minutes, or until the pastry is golden and risen and the pears have lightly caramelised.
