Spy Valley are one of New Zealand’s few remaining 100% Kiwi-owned wineries, who seek to fully express their Sauvignon Blanc grapes by ageing the wines on their lees to extract all the complexity and vibrancy of flavours this region can elicit from its beloved variety.
