Italian beef patties in lettuce cups with pesto and mozzarella

These flavour-packed burger patties with Parma ham and pesto make a really delicious and low-carb alternative to the conventional burger-in-a-bun option


  • 450g British beef mince
  • 75g SundelisiTM tomatoes, drained and finely chopped
  • 2 tbsp finely chopped basil, plus extra leaves to serve
  • 4 slices Parma ham
  • 1 tbsp olive oil
  • 12 outer leaves of Little Gem lettuce, trimmed, rinsed and dried
  • 4 tsp fresh green pesto
  • 6 mozzarella bocconcini, drained and torn
  • 60g cherry tomatoes, halved

Ready in: 30 mins



  1. Thoroughly combine the beef, SundelisiTM tomatoes, chopped basil and a grinding of black pepper. Divide the mixture into 12, and form into little patties. Tear or cut each Parma ham slice into 3 long strips, and wrap a strip round each patty. Drizzle lightly with olive oil to coat.
  2. Cook the patties on the barbecue – or in a smoking-hot griddle or frying pan – for 2-3 minutes on each side, until browned and cooked through. Divide the patties between the Little Gem leaves, along with a little pesto, torn mozzarella, cherry tomatoes and basil leaves.
