Healthy spicy chicken salad

This fiery salad is sure to become a favourite mid-week meal. Perfect served with pitta bread and dollop of guacamole or delicious simply on its own.


  • 200g easy cook long grain rice
  • Juice and zest of 2 limes
  • 500g (4 fillets) chicken breast cut into thin strips
  • 1 tbsp Cook with Recipe Paste for Pulled Pork
  • 4 tbsp chopped coriander leaves
  • ½ iceberg lettuce, shredded
  • 1 red pepper, seeds removed and finely sliced
  • 6 trimmed spring onions, sliced
  • 4 tbsp soured cream and chive dip
  • 432g can pineapple chunks, drained or ½ small pineapple, diced
  • 4 tbsp Chipotle and Corn Salsa (optional)

Ready in: 25 mins

Serves: 4


  1. Cook the rice and drain thoroughly. Add the lime zest and half the coriander leaves. Set aside to cool.
  2. Toss the chicken in the pulled pork paste, then stir fry in a non-stick frying pan over a medium heat for 3-4 minutes or until just cooked through.
  3. Layer the salad into four individual bowls, starting with the lettuce, then the rice, red pepper, spring onions, warm chicken and sour cream dip.
  4. Mix the lime juice with any pan juices and drizzle over the salad before topping with the pineapple.

Why not try...
Adding 2 roughly chopped tomatoes or 1 chopped avocado with a sprinkling of fiery dried red chilli flakes or chipotle chilli flakes.
