Rhubarb and custard crumble

A match made in heaven, for when you need a bit of home comfort


  • 125g unsalted butter
  • 360g oaty crumble mix
  • 1 tsp ground ginger
  • or cinnamon
  • 450g rhubarb compote
  • 500ml custard
  • 2-3 tbsp flaked almonds

Ready in: 25 minutes

Serves: 6


  1. Preheat the oven to160ºC (140ºC fan) gas 4.
  2. Melt the butter and stir in the crumble mix, together with the spice.
  3. Tip the rhubarb compote into a 1.2 litre shallow ovenproof dish.
    spoon on the custard. Using a knife, gently mix together.
  4. Cover the custard evenly with the crumble mix then scatter on the flaked almonds. Use a knife to make two slits into the centre of the crumble to allow steam to escape.
  5. Bake for 25 minutes or until the crumble topping is nicely browned. Remove from the oven and leave to stand for 10 minutes before diving in.
