Little orange and almond cakes

Sweet, light and fresh, these pretty cupcakes the perfect accompaniment to an afternoon tea break


  • 180g unsalted butter, plus extra for greasing
  • 50g plain flour
  • 180g Cook with M&S icing sugar
  • 100g Cook with M&S ground almonds
  • 2 tsp organge zest, finely grated
  • 5 medium egg whites
  • 50g Cook with M&S flaked almonds
  • Cook with M&S icing sugar, to dust

  1. Heat the oven to 180 C/350F/gas 4 ( 160 C for fan ovens). Grease 10 small brioche tins. Melt the butter in a small saucepan over a low heat.
  2. Sift the flour and icing sugar into a large mixing bowl.Stir in the ground almonds and orange zest.Lightly best the egg whites with a fork until just starting to foam, then pour into the dry ingredients. Add warm butter and mix with a wooden spoon until smooth.
  3. Spoon the mixture into the prepared tins, so that each tin is three-quarters full. Sprinkle the tops with flaked almonds.
  4. Bake for about 20 minutes, or until the cakes are firm to the touch, risen and golden. Allow to cool completely in the tins. Turn out, then dust with icing sugar to serve.
