Product Description
Classic, mineral and almond Chablis, with a wonderfully dry, flinty aroma, then delicate melon, butter, almond and honeysuckle on the palate. Modest, gently perfumed and utterly elegant, mildly fruity and never heavy – just as Chablis should be.
Vineyards have been planted in Chablis since Roman times, but it was with the Cistercian monks, and more lately in the 1970s that it saw its massive boom in popularity. Chablis displays the very finest side of Chardonnay, and winemaker Lucie Depuydt ensures that fermentation is at a cool 18°C to maintain this grape’s most delicate characters. By maturing the wine on partial lees for four months, it develops a gentle richness, but needs no oak-ageing
