Cooking Instructions

Place the
M&S cod fillets skinless and boneless (1 pack)
on a baking tray, season with salt and pepper and drizzle with oil. Cook in the oven according to the pack instructions.

In a large non-stick frying pan, heat 2 tbsp olive oil over a medium-high heat.

Add the
garlic (2 cloves)
,
broccoli (1 head)
and
courgettes (2)
and stir-fry for a few minutes, then add 100ml water and cook for 3-5 minutes until tender.
4.
Meanwhile, heat the
grains (2 packs)
in the microwave according to the pack instructions, then stir into the veg along with the
lemon juice (1/2)
and half the zest.
5.
Divide the grains and veg between four plates. Place the cod fillets on top, then drizzle 1 tbsp
pesto (60 g)
over each dish. Finish each with a squeeze of
lemon juice (1/2)
and a sprinkling of lemon zest.
