ABOUT THIS WINE: Willy Lunn has more than 24 years of cool climate winemaking experience (not just in Australia but in Oregon, USA too), which means that he really likes multi-layered complex wines with a taste of sophistication about them. That's what cool climate wines are all about, and that's what he has made here! Willy describes Yering Station as slightly warmer than Burgundy but a little cooler than Bordeaux.

SERVING: Serve with slow-simmered beef casserole, sausages or pizza. This Shiraz's soft subtle tannins demand complex stews rather than rare red meats.

ABOUT THIS WINE:
Whispering Tree comes from eastern Washington's remote Wahluke slope in the Columbia Valley appellation, bordered by the Columbia river. It's a remote, windswept desert dotted with sagebrush and tumbleweeds. It's also one of the best places to grow grapes. The arid climate and sandy soils produce wines of strong voice and lovely balance.

SERVING:
This silky, classic red would be the ideal partner to a typical Sunday roast with gravy and Yorkshire puddings.

Winemakers Tim Wong and Sue Hoffman give this Zin a splash of Petite Sirah (just 6% of the blend) to add some good old California dynamite (rich dark berry characters, intensity and power!). They complement these grapes with four months ageing in French and American oak barrels, too, for added spice and sophistication. A wine with no shortage of American fans: they love it for its fantastic value and bright, friendly fruit.

SERVING:
The tangy acidity in this wine makes it a great match for tomato-based sauces (think spaghetti Bolognese or pizza). There's a minty note that makes it great with lamb chops or sausages from the BBQ too.

ABOUT THIS WINE: The Cabernet Sauvignon and Malbec grapes for this blend were sourced from high altitude vineyards in the Tupungato Valley of Mendoza, Argentina, one of South America's most exciting vineyard areas. This area is characterized by cool temperatures which allow the grapes to enjoy a slow gradual ripening process. The bright sunny days and cool mountain nights mean the grapes benefit from an exceptionally long hang time, ensuring they reach their optimum level of maturity.

SERVING: This concentrated red makes a superb partner for roasted and grilled meats and hearty pasta dishes. Serve around 18°C.

KEEPING: This wine is ready to drink now and should be consumed within 3 years of purchase. Once open it will remain in good condition for up to two days if the bottle is carefully resealed between servings and stored in a cool, dark place.
