  Didier Chevillon relies totally on yeasts occurring naturally on the grapes to ferment this gorgeous Gevrey-Chambertin, nothing is added. Grapes are hand-picked, rigorously sorted, then destemmed to preserve as many of their fine fruit flavours as possible. Gevrey is renowned for its powerful, muscular wines, some of the finest being from premier cru sites like this, 'Clos Prieur'
