- ABOUT THIS WINE: Romaric Chavy is the 7th generation of the family to work the vines at Domaine Chavy-Chouet. The bottling of their own wines is a relatively new operation, prior to 1982 everything was supplied to negociants, now they are one of the most prestigious estates in the Cote D'or. The Domaine is quite large at 13 hectares and spread across Meursault, Puligny-Montrachet, St Aubin, Volnay and Pommard; the golden names!
- Everything on the estate is hand-picked, moved gently from fermentation tanks to barrels and then only has light lees stirring. The estate look for freshness not creaminess and we agree with their direction
